Sweet Cashew Cream

This delightful recipe is wonderful to use as a frosting for cupcakes or as a filling for tarts and pies. Vary the level of sweetness based on how it will be used. For example: If you are using the sweet cream for a frosting, you may prefer to make it a little sweeter by adding an additional date or two.

The Goods:

  • 1 cup cashews, soaked in water for 30 minutes to 1 hour
  • 3 dates, pitted
  • 1/2 tsp vanilla
  • cinnamon, dash

The Magic:

STEP 1: Soak cashews for 30 minutes. Next, place all ingredients into a high speed blender. Blend until smooth.

STEP 1: Special note - If you are using as a pie filling, add berries or fruit of choice to blender and mix until smooth. If using as an icing, ice away! Enjoy.
