Apple-Oat Pancakes with a Berry Coulis & Coconut Kefir
These simple pancakes are a great way to start your day. Add a mixed berry sauce (aka coulis) and a hefty dollop of a deliciously rich probiotic addition - coconut kefir! And you've got yourself a breakfast of champions. Kefir is a rich and diverse probiotic source helping to boost immunity and improve digestion. This creamy coconut addition also adds some great fats to the combo making this breakfast, brunch, or dinner meal pleasantly satisfying and richly decedent.

- 1 Cast Iron Skillet (or skillet of choice)
Ingredients
Apple-Oat Pancakes
- 1 cup oat flour
- 1 1/2 tsp baking powder
- 1/4 tsp ground cardamon
- 1/2 tsp ground cinnamon
- 1 dash sea salt
- 1/2 cup oat milk (unsweetened)
- 1 1/2 tsp apple cider vinegar
- 1/2 apple (chopped)
- 1 tsp vanilla extract
Mixed Berry Coulis
- 2 cups organic mixed berries (if using frozen berries thaw and drain)
- 1 tbsp maple syrup (or more to adjust to a desired level of sweetness)
- 1 splash lemon juice
- 1 tsp vanilla extract
Instructions
Apple-Oat Pancakes
- In a bowl, combine oat flour, baking powder, cinnamon, cardamom and sea salt. Mix well. Add milk, vanilla, apple cider vinegar, and 1/2 cup water and whisk until well combined. Add the chopped apple and mix well. Let the batter stand for 3-5 minutes to thicken.
- Heat a skillet over medium-high heat for a few minutes until hot, then reduce to low and let the skillet rest for a few minutes more. For each pancake, ladle about 1/4 cup batter into the skillet. Cook until small bubbles start to form on the outer edge and then the center of each, this takes a few minutes. Flip the pancake then cook for a few minutes on the other side.
- Serve pancakes with a warm mixed berry coulis and coconut kefir, if desired. Enjoy!
Mixed Berry Coulis
- Place the mixed berries, lemon juice, vanilla extract, and maple syrup in a high-powered blender and blend until smooth.
- Store berry coulis in a sealed glass jar and refrigerate for up to four days.
Notes
Special Note: For the coconut kefir, you can find this at a local health food store or make it on your own using milk kefir cultures. More to come on how to make this homemade version! This rich kefir is a great way to help replenish the beneficial bacteria in your gut.
